Hi, I will be selling Beignets (& Jambalaya) at the Topanga Days Festival Memorial Day Weekend, May 27- 29 in Southern California and am looking for a qualified person to be responsible for mixing and rolling out Beignet mix. It's a rather wet dough to work, but if you've worked dough, you'll get it down quickly.
This is a high production gig. We will sell thousands of Beignets and will have two donut fryers functioning. You will not be responsible for frying and will have back up on the rolling table.
Several people with experience in food prep and someone to prepare Jambalaya all day are also needed.
Also have 3 days of work for Beignet chef & food prep folks @ Gilroy Garlic Festival July 28 - 30.
Housing & gas provided if necessary to both gigs.

Looks like Beignet chefs are hired. I need to hire food prep, clean up and someone to fry.
If you could pass this reqquest along to your friends & lists, I'd appreciate it. I would like to help burners earn extra cash rather then having to go outside the community to find crew.
Menu is New Orleans Cafe du Monde Beignets. About half are served w/ my custard & choco sauces.
Topanga Canyon Days May 27 -29 (also Jambalaya)
Long Beach Bayou Festival June 23 24 25 (more hours, a $500 weekend minimal)

I've rooms for people traveling from out of town. Gas allowance too! If you've friends in SoCal, please pass this on to them.
